Tilapia Dinner

This is an easy recipe that will get even the most hated fish eaters to like it. Tilapia is a white freshwater fish. It is very lean and light tasting.

1. First coat the fish in egg whites.

2. Then, coat the fish in panko bread crumbs and add fish seasoning (such as Chef Paul Prudhomme's MAGIC Seasoning Blend). Make sure to coat both sides with the bread crumbs and seasoning.

3. Add about 2 T vegetable oil to a fry pan and heat to med/hi. Place the fish in the fry pan and brown on each side. Usually takes about 3-5 minutes per side. My husband likes them pretty crispy so I might flip them a couple times.

 4. Garnish the fish with lemon and parsley. Pair the fish with a steamed vegetable and a low sodium rice mix.

5. The tilapia should be crunchy on the outside and flaky in the center. There you have a well balanced and healthy meal. Yummy!!
